In Spain, one of the most traditional vegetable dishes is ‘pisto’.
It’s a healthy, economical, tasty, and easy-to-make dish that everyone adapts according to their personal preferences.
Today, we bring you a recipe for enjoying vegetables in a different way, which shares many similarities with pisto, at least in terms of ingredients.
This is ratatouille.
Ratatouille originated in Provence, a region in the south-eastern part of France.
In the 18th century, farmers created this dish to make use of vegetables that were overly ripe and left over at the end of the season.
Due to its great flavour, ratatouille was traditionally consumed as a main dish, although nowadays it is more commonly served as a side dish to main courses.
Either way, it’s a perfect option for enjoying vegetables, and we’ve added our special touch with Fragata olives. It’s very easy to prepare,and is perfect for preparing the day before.
Now there’s no excuse not to enjoy vegetables!

Ingredients:
- Red and green pepper
- Onion
- Garlic
- Tomato sauce
- Tomato
- Courgette
- Aubergine
- Provençal herbs
- Salt
- Olive oil
- Fragata whole green Verdial “Grandfather’s style” marinated olives
Preparation:
- Roast the peppers to remove their skins.
- Cut the garlic and onion into small pieces and fry in a frying pan with the olive oil.
- Add the tomato sauce to the frying pan and let it thicken.
- Mix the peppers with the tomato sauce.
- Wash, dry, and slice the tomato, courgette, and aubergine into thin rounds, preferably of similar size. You can use a mandolin or a sharp knife for this.
- Preheat the oven for 10 minutes at 180ºC.
- Spread the tomato sauce on the bottom of an ovenproof oval dish.
- Next, arrange the vegetable slices vertically, alternating them to form a spiral pattern.
- Season with salt, olive oil, and Provençal herbs to taste. Cover the dish with aluminium foil to steam the vegetables while cooking.
- Bake for 60 minutes at 180º C.
- Remove the aluminium foil and bake for 30 minutes more until the vegetables acquire a crisp appearance.
