250g pumpkin peeled
2 tblsps milk
50ml light olive oil
1 egg lightly beaten
150g self raising flower
1/2 tsp baking powder
75g feta cheese, crumbled
1 tblsps finely chopped Fragata pitted black olives
2 tblsps finely chopped fresh basil
Preheat the oven to 200°C
Grease 2 mini muffin pans
Cut pumpkin into 2cm pieces and place on a greased oven tray
Cook in a hot oven 200C for about 25 mins or until browned and tender
Transfer to a bowl add milk and mash until smooth
Allow to cool then stir in the oil and egg
Sift flour and baking powder into a large bowl, add pumpkin mixture, feta, olives and basil Stir until just combined, don’t over mix
Cook in a moderately hot oven 190c for about 15 minutes or until browned
Allow to cool for 5 minutes before turning out onto a wire rack
Serve warm or cold
